Bone-In Rib Roast
Bake at 350º for 16-18 minutes per pound. Use a meat thermometer in the thickest part of the roast to determine desired doneness:
Rare – 120º
Medium Rare – 130º
Medium – 140º
Medium Well – 150º
Well Done – 160º

Poultry

Unstuffed Turkey
Bake at 325º for 20 minutes per pound, basting with butter. Using a meat thermometer, insert into the thickest part of the thigh without touching the bone. Turkey is done when the internal temperature reaches 165º.

Bone-In Turkey Breast
Bake at 325º for 20 minutes per pound. Using a meat thermometer in the thickest part of the breast, temperature will be 165º when done.

Turkey Roulade
Bake at 350º for 1½-2 hours, basting with butter. Use a meat thermometer and when roulade reaches an internal temperature of 165º, it is done.

Diestel Light /Dark Turkey Roast
Bake at 325º for 25 minutes per pound. Turkey is done when internal temperature reaches 165º.

Lamb

Bone-In Leg of Lamb
Bake at 350º for 25 minutes per pound. Using a meat thermometer in the thickest part, lamb is done when temperature reaches 135º.

Pork

Pork Crown Roast
Bake at 325º for 15 minutes per pound. Roast is done when internal temperature reaches 145º.

MOC Bone-In and Boneless Spiral Hams
Wrap ham in foil, leaving an opening at the top. Cook at 325º for approx. 1-2 hours until internal temperature reaches 140º.

MOC Bone-In Carving Ham
Wrap ham in foil, leaving an opening at the top. Cook at 325º for approx. 2½-3 hours until internal temperature reaches 140º.

Seafood

Salmon Fillets
Cook at 375º, skin-side down in a roasting pan on parchment paper (skin will stick otherwise). A 2-3 lb fillet will take 15-20 minutes. A 1-2 lb fillet will take 12-15 minutes. Internal temperature will be 145º when done.

Crab Cakes
Preheat oven to 350º. In a saucepan on the stovetop, add 1 T of olive oil per cake. Cook cakes over medium heat for 3-4 minutes per side or until cake is golden brown. Finish in the oven, cooking until internal temperature reaches 165º.
